Chicago-Style Deep-Dish Pizza Dough (Edwardo’s Style)
Ingredients (Makes one 12-inch deep-dish pizza) • 3 1/4 cups (390g) all-purpose flour (or 2 3/4 cups AP flour + 1/2 cup semolina for extra crisp) • 1/2 cup (120ml) corn oil (or substitute half with melted butter for a richer crust) • 1/2 cup (120ml) warm water (about 110°F / 43°C) • 1/4 cup (60ml) whole milk (room temperature) • 2 1/4 teaspoons (1 packet) active dry yeast • 1 teaspoon sugar • 1 teaspoon salt • 2 tablespoons unsalted butter, softened (for laminating the dough)
Instructions
Activate the Yeast
1. In a small bowl, combine warm water, sugar, and yeast. Stir gently and let sit for 5–10 minutes until it becomes foamy.
2. Make the Dough 2. In a large mixing bowl, combine flour and salt.
3. Add corn oil (or oil + melted butter mix) and milk.
4. Pour in the yeast mixture and mix until a rough dough forms. 3. Knead the Dough
5. Transfer dough to a floured surface and knead for 3–5 minutes until smooth.
6. Place in a lightly oiled bowl, cover, and let rise for 1.5–2 hours (or until doubled in size). 4. Laminate for Flakiness (Edwardo’s Secret)
7. Roll out dough into a rectangle and spread softened butter over it.
8. Fold like a letter (tri-fold), then roll out and fold again.
9. Wrap in plastic and refrigerate for 30 minutes (this creates flaky layers). 5. Shape & Bake
10. Preheat oven to 425–450°F (218–232°C).
11. Grease a deep-dish pizza pan with butter or oil.
12. Roll out dough and press it into the pan, pushing it up the sides.
13. Par-bake for 5–7 minutes to prevent sogginess.
14. Add cheese, toppings, and sauce, then bake for 35–45 minutes.
Pro Tips
• Semolina flour (optional) adds a more authentic crunch. • Corn oil is key to the classic deep-dish flavor. • Butter layering (lamination) gives that signature flaky crust. This will give you a buttery, crispy crust like Edwardo’s! Let me know if you want sauce and cheese recommendations too. Chicago-Style Deep-Dish Pizza Sauce & Cheese (Edwardo’s Style) Edwardo’s is known for its rich, chunky tomato sauce and gooey cheese that creates a perfect balance of flavors. Here’s how to replicate their signature taste.
Authentic Chicago Deep-Dish Pizza Sauce This sauce is thicker and chunkier than regular pizza sauce to prevent a soggy crust.
Ingredients
• 1 can (28 oz) San Marzano whole tomatoes, drained and hand-crushed • 2 tablespoons tomato paste (for richness) • 2 tablespoons olive oil • 3 cloves garlic, minced • 1 teaspoon dried oregano • 1 teaspoon dried basil • 1/2 teaspoon red pepper flakes (optional, for slight heat) • 1 teaspoon sugar (balances acidity) • 1/2 teaspoon salt • 1/2 teaspoon black pepper • 1 teaspoon balsamic vinegar (adds depth) Instructions 1. Heat olive oil in a saucepan over medium heat. 2. Add garlic and cook for 30 seconds until fragrant. 3. Stir in tomato paste and cook for another 1–2 minutes. 4. Add hand-crushed tomatoes, oregano, basil, red pepper flakes, sugar, salt, and pepper. 5. Simmer uncovered on low heat for 25–30 minutes until thickened. 6. Stir in balsamic vinegar, then remove from heat. ⸻ The Cheese (Signature Edwardo’s Blend) Edwardo’s deep-dish uses a blend of mozzarella and provolone for a gooey, stretchy texture. Best Cheese Blend for Edwardo’s Style • 2 cups whole-milk mozzarella, shredded • 1 cup provolone, shredded or thinly sliced • 1/4 cup Parmesan or Pecorino Romano, grated (for extra flavor) ⸻ How to Assemble Like Edwardo’s 1. Layer cheese first – Unlike regular pizza, deep-dish starts with a thick layer of cheese on the bottom (this prevents the crust from getting soggy). 2. Add toppings – If using meats like sausage, press raw Italian sausage directly onto the cheese (it cooks in the oven). 3. Spoon sauce on top – Spread the chunky sauce over the toppings (deep-dish pizza has the sauce on top, not under the cheese). 4. Finish with grated Parmesan – Adds a final layer of umami flavor. ⸻ Final Bake Time • 425°F (218°C) for 35–45 minutes (deep-dish takes longer to cook). • If the top starts browning too fast, loosely cover with foil. This will give you that buttery crust, gooey cheese, and rich, tangy sauce that makes Edwardo’s deep-dish legendary. Enjoy!
